nixos: add quickshell/waybar/taffybar modules

- Switch taffybar input to the local submodule
- Add caelestia quickshell (home-manager module)
- Make waybar/taffybar mutually exclusive, defaulting based on xmonad
- Move tray ordering and status notifier watcher config into the right modules
